Attica is mainly characterized by mountainous topography, which prevents the entry of northern winds, while its southern, more flat part is exposed to southern winds. The proximity to the sea moderates temperatures in coastal areas, but most of the region belongs to the driest and hottest areas of Greece. The thermal sum exceeds 2,300 degree days, while the annual rainfall does not exceed 480 mm, with less than 100 mm during the summer months. The soils are mainly calcareous, formed by river and lake alluvium, poor in organic matter and mainly sandy loam, with low fertility. In these conditions, Savvatiano adapts extremely well, thanks to its resistance to drought and the way of cultivation in densely planted vineyards with a cup-shaped formation. The vineyards of Attica, mainly in the Mesogeia, together with those of Boeotia (Livadia region) and Evia (Chalkida valley and Lilanti plain), constitute the main production zone of retsina, traditionally from the Savvatiano variety and to a lesser extent Roditis. In addition, several international varieties have been planted, often in linear vineyards.
