In Imathia, Naoussa is found, one of the most important Designations of Origin of the Greek vineyard, known for the production of high quality red dry wines that come exclusively from the Xinomavro variety. In the Naoussa vineyard, Xinomavro occupies approximately 6,000 to 6,500 acres, almost all of which are formed in linear systems. Under the climatic conditions of the region, the variety ripens slowly, usually after September 20, which makes it more sensitive to cold and wet years, during which the intense tannic character of the wines produced is enhanced. The quality of the wines of Naoussa is decisively influenced by the great variety of both the relief and the soils of the zone. Xinomavros crops extend to the foothills and eastern slopes of Mount Vermio, at altitudes of 100 to 400 meters, and grow in different types of soil, ranging from acidic shale to clay-limestone. In general, the best ripening of the variety is achieved in limestone soils with good drainage. The qualitative characteristics of the wines are even more evident when they come from vineyards with low yields per acre and proper and careful viticultural practices are applied.
