The most important viticultural zone of Kilkis is the PDO Goumenissa, which extends on the slopes of Mount Paiko and, at altitudes between 150 and 250 meters, offers milder and more accessible cultivation conditions compared to Naoussa. The Goumenissa vineyard is located northwest of Thessaloniki and is characterized by a hilly landscape with various orientations. The plantings are located on gentle slopes, on soils of medium fertility, which favor quality production. Xinomavro is the main variety of the region, while some international varieties are also cultivated, which show particularly remarkable results. A distinctive feature of the Goumenissa vineyard is the presence of the local red variety Negoska, which participates in the cultivated area at a rate of approximately 23–30%. The vineyards are linear, with relatively sparse planting, around 350 vines per hectare, and the plants are supported and formed in a bilateral linear system.
