In Viotia, viticulture includes both indigenous and international varieties. The main center is the lowland area of ​​Thebes, where the varieties Savvatiano and Roditis are cultivated in deep clay soils, mainly for table wines and retsina. On the cool slopes of Mount Kithairon, in the northeast and northwest, which are located on the borders of Attica and Boeotia, a wide variety of native and foreign varieties are grown in modern linear plantings. Of particular interest is the red local variety Mouchtaro, which the producers of the region are trying to revive with very encouraging results.
